What are "cut and come again" greens? And how do you cut them, just at the base of the leaves?

*Cut & come again* means you harvest some of the mature young leaves & the smaller leaves will come along soon & regularly, for a long season. All greens will do this. The term often refers to mixed lettuces such as *mesclun.* I like to use a good, but not pricey, utility scissors & cut the outside leaves, leaving 1/2" or so. The new growth will come from the center of the plant. If you cut at the center of the plant, chances are you will clip new growth. When you harvest this way, the patch always looks beautiful ...
