Bradford Elementary's Spring Salad

This recipe was served as a taste test at Bradford Elementary School, using pea shoots and lettuce grown in our school gardens, and featuring local maple syrup in the dressing! Everyone loved the salad. We're grateful to KGI for awarding us a Sow it Forward grant, which supported our garden program.

Ingredients

  • 4 cups pea shoots
  • 4 cups baby lettuce
  • 1 T lemon juice
  • 1 clove minced garlic
  • 1/4 cup balsamic vinegar
  • 1/2 cup real maple syrup
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 T fresh basil (optional)
  • 1 tsp dry mustard (optional)

Preparation

Wash & toss pea shoots and lettuce. Whisk together all other ingredients, then toss greens in the dressing. Eat up - yum!
