What is best to plant in the spring time?

I want to plant a moderate sized garden for the summer over my spring break (which is in a week). I live in Charlotte NC, so it's pretty warm there. its probably going to be between 60-75 for the rest of the spring season. What would be the best plants for me to plant?

I'd plant beets and carrots. I'm assuming you will be around for spring break and then leaving for a time. You need to make sure the soil is moist evenly throughout germination but once they are up you can have someone check on them once a week. I'm from Maine, so I'll leave other suggestions to folks from further south.
