I was watching a scandinavian cooking show and the host pulled some white roots that looked like parsnips out of a garden to cook with. He said they were Parsley Root. Has anyone here grown or cooked with them? What can you tell us about them?

We are currently growing some. They are growing much more slowly than I had anticipated. However, I just had to plant some, since they are next to impossible to find in stores here, and they are one of my favorite root vegetables. They have a lovely sweet/nutty/parsley flavor and go extremely well with fish. Bonus: you can use the leaves too -- the leaves taste just like regular parsley.
I planted some this year and am leaving them in the ground for now, as we are having such a mild fall. I cut them up in chunks and roast them with similar sized pieces of carrots, onions, white potatoes, sweet potatoes and/or winter squash tossed with a little olive oil to coat. With salt and pepper and a squeeze of lemon when they are done, they are really tasty. My mom used to dip finger sized pieces in beaten egg and then flour and fry them--also yummy.
We roast our veggies the same way, delicious!
I tried 3 new things this year: parsley root, celeraic & leeks. Direct sowed instead of starting inside as packet advised. The parsley root has done wonderfully. Very large roots, mostly straight except for the ones I didn't thin enough, that curled around each other. No problems with pests. So far I've just used them in soups and stews. I don't peel the roots, just scrub them well and remove any stray root hairs. Will definitely be planting them again next year.
Thankyou Susan, I think I'll try some this coming year, a few in the spring and a few in the fall to see how they do hear in South Carolina.
