Question

We are currently growing some. They are growing much more slowly than I had anticipated. However, I just had to plant some, since they are next to impossible to find in stores here, and they are one of my favorite root vegetables. They have a lovely sweet/nutty/parsley flavor and go extremely well with fish. Bonus: you can use the leaves too -- the leaves taste just like regular parsley.

I planted some this year and am leaving them in the ground for now, as we are having such a mild fall. I cut them up in chunks and roast them with similar sized pieces of carrots, onions, white potatoes, sweet potatoes and/or winter squash tossed with a little olive oil to coat. With salt and pepper and a squeeze of lemon when they are done, they are really tasty. My mom used to dip finger sized pieces in beaten egg and then flour and fry them--also yummy.

I tried 3 new things this year: parsley root, celeraic & leeks. Direct sowed instead of starting inside as packet advised. The parsley root has done wonderfully. Very large roots, mostly straight except for the ones I didn't thin enough, that curled around each other. No problems with pests. So far I've just used them in soups and stews. I don't peel the roots, just scrub them well and remove any stray root hairs. Will definitely be planting them again next year.
