What does "early" refer to?

Question details

When you suggest planting "early beets" or "early spinach" does that mean a particular variety or does it mean you are planting it earlier in the season that usual?

Usually this means that they mature quickly and can withstand a little cold so you can plant them early in the season. If you were succession planting, say 3 types of spinach, you would want an "early" type, a "main season" crop, and a "late" or "winter" spinach. Sometime "early" also becomes a specific variety such as "early girl" tomatoes. I hope this helps. -JG
