Miss-calculation?

I love bell peppers and now that I have my kitchen garden I can grow bell peppers to my heart’s content for the very first time. To get a head start I pre-sowed pepper pips in plastic pots put and them in the little greenhouse. Now I wait and wait and calculate: 8 pots with 8 seeds each plant 8 peppers = 512 bell peppers, give or take a few. Anyone out there with a great recipe for preserving bell peppers?

<p> Hi Kim</p><p> I think you are possibly being a little optimistic, but that is no bad thing. Dealing with gluts is a part of vegetable gardening, an enjoyable one at that. There is no better feeling than being able to distribute the product of your labours to all your friends and family.</p><p> To balance out the gluts their will always be failures. That is the way it works. Crop failures are a fact of life, but if you accept that their will be failures then they are not a problem. You just have to work out if the failure was due to something you have done and put it right, or if it was beyond your control. Normally it is the latter.</p><p> I hope you enjoy all of your 512 bell peppers.</p><p> Glenn </p>
<p> When we installed our first, large beam-edged garden, I found I was also successful at raising all kinds of transplants - with Speedling flats - my all-time favorite method.</p><p> So one day I phoned an experienced, organic grower & asked, <em>"Tom, how many Zuchini transplants do I need for our family?"</em> He said, <em>"Oh, two or three." </em> I said, "<em>Tom. I have 25 gorgeous Zuchini transplants."</em> After pausing before the enormity of it all he said, <em>"Go for it!"</em></p><p> With abundant peppers - living in New Mexico I found the different kinds of pepper jellies very appealing. It wasn't the heat, they weren't all hot, but their flavor - which brings back a whole-season memory. I wonder if you could even dry lavender Chive blossom petals & use them later in a pepper jelly for color and - pepperiness? :-)</p><p> Christmas presents!</p>
