Baked Eggplant Parm

Busy with the cooking (made eggplant parm and sauce for dinner, canned tomatoes for the first time) and gardening (mostly trying to keep up with the picking). The link below is for the parm recipe. Found it at allrecipes.com. It calls for baking the eggplant instead of frying. I've tried it 3 times this month and really like it. I've stared to bake more eggplant than needed for the recipe and have been freezing the leftover baked eggplant rounds for future use. http://allrecipes.com/recipe/eggplant-parmesan-ii/detail.aspx On a side note...I was a little nervous about the tropical storms effects on the garden, but it it seems to be reacting really well since the storm passed on Sunday.
